Tom Kha Soup ต้มข่า

Tom Kha Kai Soup or Galangal Soup or Coconut Soup, whatever call it, it is the most famous Thai soup. It's really easy to make and the ingredients are very similar to Tom Yum soup so let's get started!


Serves 3-4 people.

Ingredients
1       can (400 ml) coconut milk
1 ½   cups water
3       Kaffir lime leaves
3       pieces galangal
1       chicken breast - remove the meat from the bones and slice the meat into thin pieces
1 ½   Tbs Tomyum paste
1/8     tsp salt
¼       head sliced onion
½       cups sliced carrots
½       cup sliced mushrooms
½       tomato large slices
1 ½    Tbs fish sauce
2        Tbs sugar
1        Tbs Cilantro for garnish
1        stalk lemon grass; sliced into angled pieces about 2 inches long

Preparation:
  1. Pour coconut milk and water into the pot and then set your stove at medium heat.
  2. Add lime leaf, galangal, lemon grass, and Tomyum paste and then wait for it to boil.
  3. Once it’s boiling put in the chicken and wait until the chicken is about cooked.
  4. Add salt, sugar, and fish sauce. After about 2-3 minutes, add carrots, onions, mushrooms, and tomatoes.
  5. Once the vegetables are done cooking, turn of your stove, add cilantro, and enjoy!
