Coconut Milk
CHAOKOH and MAEPLOY are the best coconut brands I use. They are really thick and they are good for cooking.
Curry Paste
MAEPLOY and MAESRI are the curry pasts I used back home as well. However, the cons of MAESRI brand is the package. The curry paste come in the can. Once you open the can, it doesn't keep very well. You will need to use it fairly quickly. However, those sold in plastic container keep much longer by simply storing them in the fridge after opening.
Soup Paste
Tom Yum Soup (on the right)
I'm sure any of you who really like Thai food would know the " Tom Yum Soup". It is one of the most popular soup in Thailand. If you ask me why would I used the paste for cooking. I would say because in Thailand we use really fresh ingredients, so everything smell strong enough for the food to taste and smell as it suppose to be. But thinking about fresh products from Thailand come across to America. "How long will it take to cross the Pacific Ocean?". By the time they get here, they hardly smell like anything. That's why I use the paste as an alternative for my cooking. If you look at the ingredients list on the bottle you will see the name of ingredients that suppose to use for Tom Yum soup as we make it in Thailand.
Noodle Soup Paste (on the left)
Base on the same reason as the Tom Yum soup pastes. This is what I use when I make noodle soup.
Soy sauce and Fish Sauce
Fish Sauce
We usually use Fish sauce in soup, salad, and grill. It smell bad by itself, ( don't try to smell it) but it make the food taste very good. "Tiparos" is the brand I use. They also have "squid" brand. I think squid brand has stronger smell, so I like Tiparos better.
Soy Sauce
Golden Mountain is the best seasoning sauce that Thai people use. It usually be using for stir fry. It's similar to soy sauce. ( Actually Thai people use this sauce as soy sauce). It's different from soy sauce that you get at WalMart. I think WalMart soy sauce taste saltier.
Concentrate Cooking Tamarind
We actually use concentrate tamarind liquid quite often in Thai dishes such as papaya salad, and massaman curry.
Coconut Sugar
Coconut sugar is often use in Thai cooking as well. We usually use it for dessert, salad, and dipping sauce. It's not as sweet as regular white sugar, but it's better for you. I love the smell of it too.
Sticky Rice steamer
Sticky rice can be eat with many dishes or making desert. We usually put sticky rice in the bamboo steamer and steam for 20-25 minutes depending on how much rice we want to cook.
