How to Steam Sticky Rice

Usually people in the Northeastern part of Thailand eat sticky rice. Sticky rice can be eaten with many dishes such papaya salad, beef waterfall, and Laab or with any Esan (Northeastern) curry. Thai people use sticky rice to make different dessert as well. The right and the best way to cook sticky rice is to steam which is totally different from cooking jasmine rice.



How to cook Sticky Rice
1 cup of sticky rice per person (approximately)

Preparation:
1. Put sticky rice in a large bowl and fill it with water until the water level is above the rice.
2.  Soak at least 3 hours. Soaking it overnight about 6-7 is okay.
3.  For 2-4 cups of rice put 6 cups of water in the pot to steam the rice. Add 1 cup of water for every 2 cups of rice.
4.  Put rice in the rice basket over the sink.
5.  Put the rice basket on the pot.
6.  Put the lid on the rice basket covering the sticky rice.
7.  Steam the rice for 20-25 minutes depending on amount of rice being steamed. Rice should go from a white color to a clear color when it done.
8.  Flip the rice and steam for another 5-8 minutes. (If you don't know how to flip, just use spoon stir on top of the rice)
9.  Once it's done, if you have a rice cooker put it in there with the lid shut to prevent it from drying out. A bowl with a lid or plastic wrap with also work fine.
