Grilled Pork on Skewers (Moo Ping) หมูปิ้งรถเข็น

Grilled Pork on Skewers or Moo Ping is a very famous and loved Thai street food. It is usually served in the morning when everybody is rushing to work or school. Anybody who has ever been to Thailand has seen food being prepared on a food cart and Moo Ping being grilled over charcoal fire. I remember growing up eating this tasty dish with sticky rice.


Serving 2-3 people

Ingredients
500       gram (1.1 lbs) of pork butt or pork shoulder (do not use lean pork; pork with some fat is best)
1/2        tsp light soy sauce
1 ½       Tbs evaporated cooking milk
1 ½       Tbs pure coconut sugar or palm sugar (1 1/2 Tbs white sugar)
1           Tbs oyster sauce
1 ½       Tbs soy sauce with mushroom
3           cloves garlic
1/4        tsp ground white pepper
1/2        Tbs vegetable oil
1           tsp  corn flour
1/8        cup of water
1/4        tsp pork flavor bouillon
1/8        tsp banking powder
1/8        cup evaporated cooking milk with which to brush the pork
Bamboo skewers soaked in water for an hour to prevent them from scorching when grilling

Preparation
1.         Cut pork into ¼ to ½ inch thick bite-sized pieces.
2.         Mix all ingredients with pork into a large bowl and marinate for 2 hours (except 1/8 cup evaporated milk as we are going to use it during grilling). If you are going to marinate it for more than 2 hours, put it in the refrigerator.
3.         Thread the pork onto presoaked bamboo skewers.
4.         Grill over charcoal at medium heat ( I know this may be difficult, but really try to get it to a medium heat not too hot or low). Turn several times and brush the evaporated cooking milk on the pork occasionally while it’s on the grill until the pork is cooked all the way through.
5.       Serve warm with sticky rice.
